Cherry Clafouti
Ingredients
- unsalted butter
- 1 to 2 c. sweet Bing cherries
- ¾ c. all-purpose flour
- ¾ c. sugar
- 1 pinch salt
- 4 large eggs
- 2 c. heavy cream
- 1 vanilla bean
- confectioners' sugar
- Crème fraiche
Directions
- Preheat oven to 375 degrees F. Brush 2-quart glass or ceramic baking dish or 10-inch skillet with butter. Arrange cherries in prepared baking dish; set aside.
- In large bowl, whisk flour, sugar, and salt. Whisk in eggs, one at a time. Slowly whisk in cream, then vanilla seeds. Pour batter over cherries in baking dish.
- Sprinkle top with granulated sugar. Bake 50 minutes or until firm. Dust top with confectioners’ sugar. Serve with dollop of crème fraiche.
