Corned Beef Hash

Corned Beef Hash

Ingredients

  • 2 tbsp. vegetable oil
  • 1 medium green pepper
  • 1 medium Red Onion
  • .13 tsp. salt
  • 2 c. chopped cooked potatoes
  • 2 c. chopped cooked corned beef
  • ¼ c. basil leaves
  • 4 eggs
  • 1 pinch black pepper

Directions

  1. Preheat oven to 450 degrees F. Lightly brush 4 individual baking dishes or 1 large skillet with vegetable oil.
  2. In 12-inch nonstick skillet, heat 2 tablespoons vegetable oil on medium-high. Add green pepper, red onion, and salt. Cook 10 minutes or until vegetables are almost tender, stirring occasionally.
  3. Add potatoes and corned beef. Cook 5 minutes, stirring often. Stir in basil leaves. Divide among prepared baking dishes. Top each with 1 egg and pinch of black pepper. Bake 13 to 15 minutes or until desired doneness.
