Mediterranean Chicken and Couscous Salad


Ingredients

  • 1 box garlic and olive oil flavored couscous
  • 1 can chickpeas
  • 2 purchased roast chicken breast halves (about 5 oz each)
  • 4 c. baby spinach
  • 2 Kirby (pickling) cucumbers
  • 1 jar roasted red peppers
  • 4 oz. feta cheese

Directions

  1. Prepare couscous as package directs.
  2. In a large bowl, combine the couscous, chickpeas, chicken, spinach, dressing, and half the cucumbers, roasted peppers, feta, dill and scallions.
  3. Spoon mixture on serving plates. Sprinkle with remaining cucumber, peppers, feta, dill and scallions. Serve with breadsticks.
