Mediterranean Chicken and Couscous Salad
Ingredients
- 1 box garlic and olive oil flavored couscous
- 1 can chickpeas
- 2 purchased roast chicken breast halves (about 5 oz each)
- 4 c. baby spinach
- 2 Kirby (pickling) cucumbers
- 1 jar roasted red peppers
- 4 oz. feta cheese
Directions
- Prepare couscous as package directs.
- In a large bowl, combine the couscous, chickpeas, chicken, spinach, dressing, and half the cucumbers, roasted peppers, feta, dill and scallions.
- Spoon mixture on serving plates. Sprinkle with remaining cucumber, peppers, feta, dill and scallions. Serve with breadsticks.
