Quinoa Tabbouleh Salad
Ingredients
- 2 tbsp. fresh lemon juice
- 1 tbsp. chopped flat-leaf parsley
- 1 tsp. olive oil
- 1 pinch salt
- 1 pinch Pepper
- ¾ c. cooked quinoa
- ½ c. canned chickpeas
- 1 plum tomato
- ¼ seedless cucumber
Directions
- In a medium bowl, whisk together fresh lemon juice, flat-leaf parsley, olive oil, salt, and pepper.
- Add cooked quinoa, chickpeas, tomato, and cucumber and toss to combine.
