Herb-Rub Salmon
Ingredients
- 8 skin-on salmon fillets
- 2 tsp. oil
- 1¼ tsp. salt
- ½ c. finely chopped fresh dill
- ¼ c. finely chopped fresh tarragon
- 1 tbsp. finely grated lemon peel
- 1 tbsp. sugar
Directions
- Prepare grill for direct grilling on medium. Brush grate until very clean.
- Combine dill, tarragon, lemon peel, and sugar and set aside. Pat salmon fillets dry. Brush fillets all over with oil; sprinkle with salt. Coat flesh sides with herb-rub.
- Push soaked skewers through salmon lengthwise; place, skin side down, on grill. Cover; cook without turning over 14 minutes or until just opaque. With metal spatula, scrape fillets from grill. If skin sticks to grate, remove fillet only.
