Herb-Rub Salmon



Ingredients

  • 8 skin-on salmon fillets
  • 2 tsp. oil
  • 1¼ tsp. salt
  • ½ c. finely chopped fresh dill
  • ¼ c. finely chopped fresh tarragon
  • 1 tbsp. finely grated lemon peel
  • 1 tbsp. sugar

Directions

  1. Prepare grill for direct grilling on medium. Brush grate until very clean.
  2. Combine dill, tarragon, lemon peel, and sugar and set aside. Pat salmon fillets dry. Brush fillets all over with oil; sprinkle with salt. Coat flesh sides with herb-rub.
  3. Push soaked skewers through salmon lengthwise; place, skin side down, on grill. Cover; cook without turning over 14 minutes or until just opaque. With metal spatula, scrape fillets from grill. If skin sticks to grate, remove fillet only.
