Mediterranean Shrimp and Bulgur
Ingredients
- ¾ c. bulgur (cracked wheat)
- ½ large seedless cucumber
- 3 scallions
- ½ c. mint leaves
- 1 lb. frozen cooked large shrimp
- 1 pt. grape tomatoes
- ¼ c. lemon juice
- 2 tbsp. olive oil
- ¼ tsp. each salt and pepper
- 3 c. baby arugula
- 2 oz. feta cheese
Directions
- Put bulgur in large bowl. Add boiling water to cover; let soak 15 minutes.
- Meanwhile, coarsely chop cucumber, scallions and mint leaves.
- Drain bulgur well, return to bowl and add shrimp, tomatoes, cucumber, scallions, mint, lemon juice, olive oil, salt and pepper. Toss with arugula. Sprinkle with the feta.
