Mediterranean Shrimp and Bulgur



Ingredients

  • ¾ c. bulgur (cracked wheat)
  • ½ large seedless cucumber
  • 3 scallions
  • ½ c. mint leaves
  • 1 lb. frozen cooked large shrimp
  • 1 pt. grape tomatoes
  • ¼ c. lemon juice
  • 2 tbsp. olive oil
  • ¼ tsp. each salt and pepper
  • 3 c. baby arugula
  • 2 oz. feta cheese

Directions

  1. Put bulgur in large bowl. Add boiling water to cover; let soak 15 minutes.
  2. Meanwhile, coarsely chop cucumber, scallions and mint leaves.
  3. Drain bulgur well, return to bowl and add shrimp, tomatoes, cucumber, scallions, mint, lemon juice, olive oil, salt and pepper. Toss with arugula. Sprinkle with the feta.
